Sorrel looks very similar to spinach, yet its nutritional content is much higher. Sorrel leaves are a powerhouse of nutrients, highly beneficial for human body. If you wonder how Sorrel Soup taste, think of a spinach soup with a hint of lemon juice 🙂

While sorrel brings a unique delightful flavor to your dishes, the real value of sorrel is in its vitamin content. The healing properties of this fiber-rich plant are due to its unique vitamin and mineral composition. Large quantities of vitamin C in sorrel help strengthen the walls of blood vessels and reduce bad cholesterol. The leaves of the plant are rich in vitamins B, E, K, assisting in the breakdown of proteins, carbohydrates and fat entering the body with food, normalizing the central nervous system, and regenerating the cells. A single cup of sorrel contains 106% of your daily recommended intake of vitamin C. Sorrel also contains biotin, β-carotene, essential oils, polyphenolic acids, flavonoids, and anthocyanins. Among the mineral elements can be noted iron, phosphorus, magnesium and calcium. Sorrel has also a significant level of potassium – 1 cup contains 15% of your daily recommended intake.

Gala’s Sorrel Soup is as easy to make as it gets. Just boil a couple of eggs and set aside; add the contents of the pack to a pot of cold water, cook for 15 minutes, add sorrel from the pack and cooked eggs, cook another 5 minutes – and enjoy! You can add cooked meat along with the eggs as sorrel, if desired. It is advisable to add a dollop of sour cream to individual bowls right before serving, as sour cream increases the nutritional value of sorrel.
